Chocolate Chip Zucchini Cookies


I wasn't joking when I said the next post would involve zucchinis - and so here it is. I wasn't sure what I was going to make, bread, cake, cookies? Then Steve made it easy. He yelled COOKIES at me and that was that. 

What I love about this recipe is that you don't need to use a lot of butter because the zucchini helps to make the cookies moist. So you could say these are healthy cookies... regardless, these cookies are great because they have chocolate in them and lets face it, that's all that matters! Enjoy :)



Ingredients
1 1/4 cups all purpose flour
1 teaspoon baking soda

1/2 teaspoon salt

3/4 teaspoon cinnamon

4 tablespoons unsalted butter, at room temperature

1/2 cup light brown sugar

1/4 cup granulated sugar
1 teaspoon vanilla extract

1 large egg

1 cup shredded zucchini
2 cups old fashioned oats
1 cup semisweet chocolate chips(I used dark chocolate chips)

Directions
Preheat your oven to 350 degrees. Line a baking sheet with parchment paper and set aside.

In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. 

In a large mixing bowl, combine butter, brown sugar, and granulated sugar. Mix until smooth. Next add the egg and vanilla extract, mix, then add the shredded zucchini. Mix until combined.

Slowly add flour mixture until just combined. Stir in oats and chocolate chips.




Drop cookie dough by heaping tablespoonfuls 2 inches apart onto baking sheets. Bake for 12 minutes or until golden brown. Remove cookies baking sheets cool completely on wire racks.
