Hasselback Potatoes


Have you ever had Hasselback Potatoes? If you haven't, don't worry! I only discovered these a few months ago. They're the Swedish version of the baked potato and in my opinion, greatly surpass our version of the baked potato - both in taste and presentation. Plus they are SUPER easy, which is probably why this will become a staple in our household. 

What I truly love about potatoes is, that they can be so versatile, you can add any of your favorite spices/ingredients, cook them anyway you want, and most likely your dish will taste amazing. For this recipe I chose to season the potatoes with greek seasoning - but choose whatever seasoning you wish! **cough cough...Lemon Pepper seasoning is also delicious..


Ingredients
Potatoes(I'm sure that was a given...)
2-3 Tablespoons Butter(Not margarine, come on now!)
1 teaspoon Greek Seasoning(or choose your own seasoning)
1/2 teaspoon Garlic Salt

Instructions
Preheat oven to 425 degrees

Grab your potatoes and give them a good washing. Take a sharp knife and cut across the potatoes, creating slices - but don't cut all the way through!



Melt your butter in the microwave for 1 minute on high. Add your spices and mix it around a bit.

Now baste your potatoes with the melted butter mixture, make sure to gently get in between the slices. 



Place potatoes in a baking dish and bake in the oven for 40-45 minutes. When the potatoes are done, take them out and if you have a little bit of the butter mixture left over, feel free to brush some of it on the hot potatoes. Serve and enjoy!
