Garlic & Parmesan Cheese Fries


Fries are heaven aren't they? Especially homemade baked fries. And guess what, they're incredibly easy to make too! Alright, so perhaps this isn't the healthiest snack but considering my previous posts, I'm not exactly on a health kick here people! I'm always up for indulging greasy, high-carb food, as long as it's in moderate proportions...then hello treadmill.

I've been searching to find some alternative recipes for potatoes. Steve loves them mashed, baked and boiled, but the same ol' recipes get tiring. So when I found this recipe it was a no brainer. 

Ingredients
2 Russet potatoes - unpeeled
Couple pinches of salt
3 Tablespoons Olive oil
1 Tablespoon Butter
1 1/2 Teaspoons minced Garlic
1/2 Teaspoon Garlic powder
Freshly grated Parmesan Cheese
Freshly chopped Parsley

Directions
Preheat your oven to 425 degrees F

Using 2 unpeeled russet potatoescut potatoes lengthwise into slices that are 1/3-inch thick, Then cut each slice into 1/3-inch thick strips.

Pat them dry with paper towel and place them in a bowl. Toss with 2-3 tablespoons of olive oil and a pinch or two of salt. Place potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 40 minutes or until golden brown. Rotate them every 10 minutes to get an even browning. 

Meanwhile, in a medium skillet, sauté 1 1/2 teaspoons of minced garlic in 1 tablespoon of butter, careful not to burn the garlic. Remove from heat and add 1/2 teaspoon of garlic powder. When fries are done, remove from the oven and toss them in the garlic-butter mixture. Sprinkle with freshly grated parmesan and freshly chopped parsley on top. Serve and enjoy.
