Nectarine & Raspberry Galette



I've always wanted to make galettes. They're so beautiful and look so tasty. So tonight's the night I make my first galette and you are all witness to this.(sorry) Alright, so there are a ton of different kinds you can make, basically skies the limit. Tonight I'm going to try a nectarine & raspberry galette, since that's the fruit I have on hand...here goes!


Ingredients
1 pie crust
3 nectarines
1/2 - 1 Cup of raspberries 
1/2 tsp. ground ginger (optional)
1/2 tsp. vanilla extract
3/4 cup sugar


Instructions
Preheat oven to 350 degrees. Wash your fruit. Slice the nectarines and put them into a medium sized bowl. Add sugar, vanilla and powdered ginger. Mix together until the fruit is coated evenly. Fold in raspberries until coated with sugar mixture, but try not to crush the raspberries. Let it sit for 3 minutes to create a sugary-syrup.



 Roll out pie crust  and pour fruit mixture into center.


Fold all sides towards the center.

Place on baking sheet and bake for 40–45 minutes. Let it cool for 5 minutes before removing it from the baking sheet. Dust with icing sugar and enjoy!
